Marilee's Cranberry Pomegranate Salad

Here is another recipe that I enjoy on Thanksgiving! Utah is well known for Jell-O salad, which was my inspiration for this salad! It is easy to make, and it can be lower sugar if you use sugar free cool whip. One cup is a fast carb serving, if you eat it with a meal, or you can have this as a snack!


Marilee's Cranberry Pomegranate Salad

1 16 oz bag of RAW cranberries

1 Pomagranate, seeded, flesh removed

1 16 oz container of Cool Whip, thawed

3 cups mini marshmallows

1/4 cups of walnuts, optional


Blend cranberries in blender until cranberries are all broken into small bits. Add them to a large bowl with cool whip, pomegranate seeds, marshmallows, and nuts. Mix until well blended, refrigerate for an hour or more. This tastes better when flavors have time to marry. The pomegranates

give a nice, juicy, and sweet crunch in each bite!
