Grandma Sellers' Famous Candied Yams

4 Medium Yams 1/4 Cup Butter Honey stiffen up a bit, dark is best. 2 cups Brown Sugar Optional: walnuts and or pecans 1/4 cup Boil yams until soft, yet firm. Dump out hot water and refrigerate overnight. The next day, peel and cut the yams into thick slices. In frying pan, add butter and let melt on LOW heat. Add 2 cups of brown sugar and enough honey to stiffen mixture. Add Nuts, if using. Add yams and cook for approx. 10 minutes per side, stirring constantly until the outsides of the yams have a nice hard glaze. If the yams start to stick to the pan, add 1-2 Tbsp. of butter, a little more brown sugar and honey. When all the yam slices are candied, place into a cake pan, add a few mini marshmallows on top. Broil in oven until marshmallows are toasted.
