What Are Leeks?

Writer's picture: MarileeMarilee

The other day, my sister gave me some leeks that my grandma had grown in her garden. Because she was unfamiliar with this delectable vegetable, she gave the leeks to me. I remember one of my missionary companions (I served a mission for The Church of Jesus Christ of Latter-Day Saints in Germany) making a delicious pasta sauce with leeks. I was SO excited to take them home and turn them into some meals...one of the meals was a warm and comforting Leek and potato chowder. Yum!

Leeks look like giant green onions and are part of the onion and garlic family. They are technically a vegetable and are slow carbs. They are full of soluble fiber, which can help with digestion and fat loss. They are full of antioxidants and a variety of nutrients, which helps keep our bodies healthy. Because they have many of the same compounds as onions and garlic, they are known to have the same type of benefits, such as heart health, by reducing cholesterol, inflammation, blood pressure, and the formation of blood clots. They taste a lot like green onion, but are less pungent than most onions.

With these great benefits, we all could use a little more leeks in our lives!
